Summer-Fresh Potato Salad

Ingredients:


3 pounds red or all-purpose potatoes -- peeled, and cut into 1-inch chunks

1 Cup water

1 teaspoon salt -- if desired

3/4 cup wish-bone robusto italian dressing

2 teaspoons lemon juice

1/4 teaspoon cracked black pepper -- (optional)

2 ribs celery -- chopped

1 medium green or red bell pepper -- chopped (optional)
 

Preparation / Directions:


In 5-quart pot, cover potatoes with water; add salt. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 10 minutes or until potatoes are tender. Drain potatoes; cool. In large bowl, combine robusto Italian dressing, lemon juice and black pepper. Stir in potatoes and vegetables; toss to coat. Chill at least 2 hours before serving. Also terrific with Wish-Bone Italian, Lite Italian, Fat Free Italian, Creamy Roasted Garlic, Fat Free Creamy Roasted Garlic, Ranch, Lite Ranch or Fat Free Ranch Dressing.
